Coffee. If you have the means (machines etc) and access to the good coffee, there are quite a few styles of coffee to be made.
Here are a few.
The Ristretto
This is an espresso served in a 6-cl cup, but which has a volume of 2.5 cl at the most. The Ristretto is strong, as it is made with the same quantity of ground coffee, but only half the water.
The Macchiato
Macchiato, which means “spotted” in Italian, is an espresso with just a dash of frothed milk. It has a far stronger and more flavoursome taste than Cappuccino.
Make a cup of espresso, then froth the milk (see p.11) and add a teaspoonful of milk to the coffee.
The Corretto
Make a cup of espresso and lace it with a table spoonful of alcohol or liqueur. In Northern Italy,grappa is used.
The Romano
This is an espresso served with a zest of lemon. The “cafezinho”,
the Brazilian equivalent of the espresso, is also often
accompanied with lemon.
The Cappuccino
The famous drink associating espresso coffee with frothy milk.
Serves 2
• 2 cups hot, strong espresso coffee
• 15-25 cl cold whole milk
• Cocoa powder
Brew 2 cups of espresso in two cappuccino cups (10-15 cl.).
Froth the milk using the pipe (see p.11), then gently pour
2 table spoonfuls of frothy milk on top of the coffee.
Dust with cocoa powder.
Filter coffee recipes
Iced coffee
Serves 2
• 45 cl cold strong coffee
• 8 drops vanilla essence
• 4 tbsp condensed milk
• Ice cubes
Process the ice cubes in a food processor to obtain approx. 60 ml of crushed ice.
Add the vanilla essence, condensed milk and cold coffee. Blend to obtain a foamy liquid. Pour into tall glasses and top with whipped cream (optional).
Coffee granité
• 50 cl hot coffee
• 100 g sugar
• Pinch of cinnamon
• 3 cardamom pods
Pour the coffee into a bowl, add the sugar and spices,
stir and leave to cool.
Pour the cold coffee into a tray and leave in the freezer for
one hour or more, until crystals begin to form.
Before serving, break up the frozen mixture with a fork to
obtain a granular consistency.
Mulled coffee
Serves 4
• 50 cl strong coffee
• 50 cl apple juice
• 2 tbsp demerara sugar
• 3 finely-sliced oranges
• 2 small cinnamon sticks
• Pinch of mixed spice
• 1 clove
Bring all the ingredients to a boil over a moderate heat, turn the heat down and leave to
simmer for 10 minutes. Strain the liquid through a conical sieve into cups which have been rinsed in hot water.
Coffee milkshake
Serves 2
• 20 cl cold coffee
• 30 cl milk
• 2 scoops vanilla ice cream
Blend all the ingredients in a food processor to obtain a creamy mixture.
Cognac-laced coffee*
Serves 2
• 20 cl strong coffee
• 2 tbsp cognac
• Single cream
• Vanilla-flavoured sugar
• Crushed ice
Crush the ice in a food processor, then add the coffee, sugar,
cognac and cream. Press the pulse button several times, then
serve the coffee in glasses, adding a little whipped cream
(optional) and decorating with shavings of chocolate.
